Pam, the feeder

City Harvest’s longest-serving volunteer is our beloved Pam. City Harvest’s Acton HQ kitchen is named after Pam for her service to City Harvest, and for the delicious food she cooks for staff, volunteers, and her local community who can’t afford to eat or cook for themselves. 

“I started cooking for the local community long before the lockdown. Through my church, I have been supporting the community since 2009. Around that time, I got surplus food from the earliest City Harvest team in Acton. When the lockdown started, I started assembling food packs from home. Additionally, when I used to come and volunteer at the City Harvest depot, I’d often take excess surplus food, if there was any, and drive to my local estate to redistribute to those without good food.” – Pam

Pam’s Spicy Sauce Recipe

Ingredients (for 1 jar)
  • 1 Scotch bonnet chilli, chopped very fine

  • 1 handful flat-leaf parsley, chopped

  • 3 tbsps white vinegar

  • 1 handful coriander, chopped

  • 3 large sprigs fresh thyme, leaves only

  • 3 sprigs fresh rosemary, leaves only, chopped

Method:
  1. In a sterilised jar with a tight-fitting lid, mix all ingredients and shake well. Shake before every use. 
  2. For a smoother sauce, you can always liquidise the ingredients in a food processor. 
Serving Suggestions:

This sauce is great for marinading chicken wings, but equally lovely for tofu, roasted vegetables and salad. It packs a punch, so be warned! This can last up to a month if not contaminated and kept in a sealed container.
